Another Attempt at Cookies

Sadly, they look like pieces of fried chicken. Yup, my cookies never flatten out for some reason. Oh wells. At least they taste alright.

Oatmeal Craisin White Chocolate Chip Cookies

Ingredients:
1 stick unsalted butter, softened
1/2 cup packed brown sugar
1/2 cup white sugar
1 egg
1/2 tsp vanilla extract
1 1/2 cup oats
1 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
3/4 cup dried cranberries
1/2 cup white chocolate chips

Preheat oven to 350F degrees. Beat butter, sugars, egg and vanilla for 5 minutes. In another bowl, whisk together flour, baking soda, baking powder, and salt. Combine oats and the flour mixture. Then add dry ingredients to butter mixture slowly until combined. Followed by cranberries and white chocolate chips into the cookie mix. Scoop onto cookie sheet and bake for 12-14 minutes. Makes about 18 medium sized cookies.

Recipes

Here are the recipes for the green tea cake and frosting used on the cupcakes. I normally don't post recipes up because Google is my best friend.  So they are not really my own recipes although sometimes I do tweak them a bit.
 
Green Tea Pound Cake
 
Ingredients:
1 stick unsalted butter, softened
1 cup sugar
4 oz cream cheese, softened
3 eggs
1 cup all purpose flour
1/2 tbp baking powder
3 tsp green tea powder
1/2 tsp vanilla extract
1/2 tsp salt
mini chocolate chips (optional)

Preheat oven to 350ºF degrees. Whisk together flour, baking powder, green tea powder and salt, set aside. Beat butter in mixer and gradually add in sugar until light and fluff, about 5 minutes. Add cream cheese and vanilla into butter and sugar mixture and beat for another minute. Next, add eggs one at a time beating well after each addition. Then slowly add the whisked dry ingredients until just incorporated. Now, fold in the chocolate chips if you opt for that. I didn't measure and simply dropped in a handful. Pour batter into a lined or greased loaf pan and bake for 45-50 minutes. Check doneness with the clean toothpick test.

 

Whipped Cream Cheese Frosting

Tops about 18 cupcakes

Ingredients:

4 oz cream cheese, softened
1/2 cup sugar
1/2 tsp vanilla extract
3/4 cup heavy cream
pinch of salt
 
Beat heavy cream in mixer until stiff peaks form, set aside. Next, beat cream cheese, vanilla, sugar and salt in mixer until smooth. Then, fold whipped cream into cream cheese mixture until combined. Fill the finished mixture into a piping bag with a large star tip or piping tip of your choice and viola! Since this frosting is heavy on dairy, it can not sit at room temperature for too long so consume asap.

Going Green in 2008



Green tea cupcakes with whipped cream cheese frosting for the New Year's Eve celebration at Graceland's place. Don't be fooled by its appearance. I cheated. These were made from a box of  white cake mix. I simply added matcha into the batter. But I was not too happy with the outcome. The subtle green tea flavor was overwhelmed by the strong cake mix flavor. To compensate I added an overdose of matcha causing the cake to appear dark moss green. And the flavor of the finished product was a little off. Surprisingly, some of my guinea pigs liked it. Perhaps the frosting saved it?

On my first work day of the year, my boss gave me a small box of treat from his recent trip to Japan. It was a matcha cake from Kyoto. And oh boy, was it good. The cupcakes just can not measure up.

Today, as MsViolet puts it, I redeemed myself. Here's my green tea pound cake. So happy I've finally baked a soft and moist cake from scratch!! Upon request, I also added some chocolate chips to replicate the Kyoto cake. I think adding azuki beans would have made more sense. Next time.

Thanksgiving 2007

Sorry I've been MIA lately.
Haven't been doing much baking but I did manage another year of Thanksgiving though.
I had no time to take good shots and just snapped these before the feasting began. Enjoy.
